Three-Grain Vegetable Bake
½ cup amaranth
2 tbsp. safflower oil
1/3 cup basmati rice
¼ cup water
2/3 cup couscous
¼ tsp. basil
2 carrots
¼ tsp. rosemary
1 ½ cups or one small bunchwatercress
½ tsp. fresh mustard
½ stalks celery
½ cup golden raisins
½ cup pecans
Prepare a medium saucepan for each of the grains (amaranth, basmati rice, and
couscous). Place 1 ¼ cups of water in saucepan with amaranth and cook for 25
minutes. Place 1 ¼ cups of water in the saucepan with the rice and cook for
approximately 20 minutes. Place couscous in 1 ¼ cups of boiling water, remove
from heat, and let stand for 10 minutes. Fluff with fork. Carefully wash carrots
and then grate into a small bowl. Rinse watercress and chop. Clean celery stalks
and chop. In large mixing bowl, combine all grains and add remaining ingredients.
Mix well. Place mixture in baking pan. Bake for 20 minutes in 325-degree
oven. (Serves 3.)
