Mariel Hemingway’s Superior Salad
Start with a bowl of one or more greens:
Lettuce, baby spinach leaves, arugula, watercress, radicchio
Then customize it your way with several of the following:
A sliced hard-boiled egg, pieces of seared fish, grilled chicken, tofu, feta, or goat cheese
Cold steamed veggies: cauliflower, broccoli, zucchini, green beans, asparagus
Raw red and yellow peppers
Grilled veggies: eggplant, zucchini, tomatoes
Marinated veggies, artichoke hearts, roasted peppers
Chopped onions
Olives
1 tablespoon currants
A palmful of fresh sprouts
A few crumbled pecans, hemp seed, pumpkin seed, sunflower seeds
Dijon Dressing (with a twist)
1 tablespoon olive oil or flaxseed oil
Juice of half a lemon
1 tablespoon Dijon mustard
Dash dulse
Dash turmeric
Whisk together and drizzle on your salad
