Chocolate and Peanut Butter Panini
This grilled sandwich is a satisfying after-school or late-night snack for fans of peanut butter and chocolate. Start with ¼-inch slices of white bread or egg bread. If you have a panini grill, preheat it.
Lightly brush one side of each bread slice with canola or any neutral oil. Place a bread slice on a cutting board oil side down and spread a thin layer of peanut butter. Sprinkle ground 62% semisweet chocolate over the peanut butter. (If you like, you can grate it using a Microplane.) Top with a second slice of bread, oil side up. Sprinkle just a little granulated sugar on top, place in the panini grill, close the top, and cook until browned and crispy.
If you don't have a panini grill, use a griddle or a cast iron skillet instead, pressing the panini with a spatula and turning so each side gets brown and crispy.
