Brazilian Broccoli Bake
½ cup lima beans
1 cup broccoli
3 oz. tofu, small slice
½ onion
1 ½ oz. Brazil nuts
2 tbsp. olive oil
1 clove garlic, minced
1 tsp. coriander
1 tsp. dried parsley
½ tsp. salt
1 tsp. mustard
In large mixing bowl, soak lima beans overnight in 2 cups of water. In the morning, rinse the beans and transfer them into a medium soup pot with 2 cups of fresh water. Cook for 1 ½ hours or until done, adding water to pot as needed. Rinse broccoli and cut into ½" florets. Rinse tofu and cut into ½" cubes. Peel and slice the onion. Place all ingredients in a large mixing bowl. Add half of the Brazil nuts, the oil, and seasonings. Add the mustard. Mix well. Place in a greased baking dish with lid. Top with remaining Brazil nuts. Bake for 20 minutes in a preheated 350-degree oven. Serve with a small filet of fish if desired. (Serves 2.)
